ELEVAGE [el-eh-va] Élevage is a French term that means to bring up or raise and relates to the finer processes involved to take the wine from fermentation to barrel to bottling including batonnage, blending and racking. An important part of elevage is the time the wine spends ageing after fermentation before being bottled, whether it's in stainless steel, in barrel or any vessel of choice. Longer periods don't always mean that the wine is going to be better, you've got to make the wine that is suited to this process too. Nebbiolo is a prime example, in comparison to stuff like Beaujolais Nouveau which you want to drink as fast as humanly possible.
MALOLACTIC FERMENTATION OR "MALO" Generally going hand in hand with some good lees and and battonage (more on that soon) - the Chardonnay special - Malolactic Fermentation is known as the 'secondary fermentation'. While for the most part done in pretty much all red wines, it's a choice to do in white wines, where all of your malic acids are fermented into lactic acids - this is where you get into your hyper creamy "flabby" wines. It can be nice in small doses for white wines and rosés, but if it's overdone, you'll feel like you're drinking cream

Our Funk Works Txakoli, Txak Atak, has been out for a little while now. For those of you who have yet to try it, maybe you are perplexed as to how it's actually pronounced. First off: It's 'cha-koh-lee', and it's one of the most fun wines to drink on the planet. Surprisingly, Txakoli isn't even a variety, it's actually just the style! We love face inverting levels of acid; if you hadn't already guessed That's why Fiano was a completely natural fit for a Txakoli inspir...ed wine. Now, there are a few rules to drinking Txakoli: One: Serve as cold as you possibly can. Like stupidly cold. That's where you get maximum refreshment. Two: Keep your fancy wine glasses away. We're in tumbler territory here! The tradition of Txakoli is tumblers only - think of it more of an aperitif than actual wine, even though it's still definitely wine. And finally: don't pair this with a meal, this is a snack wine. Anything salty, briney and even a little bit fatty will be perfect If you follow those not-really-that-strict rules, you've just created the ideal drinking experience for Txakoli. It's what inspired us to make our own loose interpretation of it, because that kind of experience of wine enjoyment pretty much aligns with everything Unico, and we're stoked on how it came out. Plus any excuse for us to drink even more Fiano!

PHENOLICS [fe-noll-ix] Science Definitely on the more difficult to explain end here - Phenolics are chemical compounds that affect the texture, flavour and even colour of your wine! Most of the phenols in wine come from the pulp, skin, seeds and stems of grapes. When someone whips out the comment "this wine has great phenolic structure" (quit yer scoffing!), they're talking about the use of skin contact and barrel ageing that creates the structure of the wine. This is... more so directed at red wines and orange/amber/off-white wines as they contain the most tannin, arguably the most important "flavanoid" phenol that affects the flavour and structure of the wine! There are a whole bunch of "non-flavanoids" like tartaric acids that are crucial to the makeup of the wine, but you wont be able to truly pick that up. It's a deep subject so if you're super keen to get nerdy, there's plenty to sink your teeth in to! See more

We're huge believers of wanting to make wine - and everything about wine - fun. So we want to lift the lid for you guys on some of the more technical wine terms you might hear on the day to day Let's kick it off with a term that is - in our mind - the most important thing when crafting a wine. TERROIR [ter-wahr / origin: French] Terroir loosely translates to "sense of place", often used to describe when a wine tastes accurately of where it was made, or even just desc...ribing the place. It can be a difficult concept to understand initially as the word is almost untranslatable; it refers to the environmental conditions, especially soil and climate that give a wine its unique flavour and aroma. A word of advice: be wary when using it, because one of your not so wine geeky friends might give you a heavy eye roll. See more
